Upside Down Cake
3/4 C Butter
3/4 C Brown Sugar
1 1/2 C All Purpose Flour
2 TSP Baking Powder
1/4 TSP Salt
1 C Sugar
1 TSP Vanilla
2 Eggs, separated
3/4 C Milk
1/4 TSP Cream of Tartar
Whipping Cream for serving
You can add slices of pineapple, orange or lemon to this recipe.
Preheat the oven to 350. Melt 4 tablespoons of butter and add the brown sugar. Once dissolved, pour this mixture in the bottom of round glass cake pan. At this point you can add thin slices of the fruit. Traditionally a half maraschino cherry is placed in the center of a pineapple slice. This cake is really good with lemons.
Whisk the flour, baking powder and salt together in a bowl. In an electric mixer beat the egg whites with the cream of tartar until stiff peaks, set aside. In the electric mixer, beat the sugar and 8 tablespoons of butter until combined and then beat in the vanilla and egg yolks. Gently fold the egg whites into this mixture. Pour mixture evenly over the fruit and brown sugar and bake for about 30 - 40 minutes. Toothpick test okay. Serve warm or at room temperature with whipped cream. This cake sometimes will raise a little more than expected so it's best to place a cookie sheet under it.
