Preheat oven to 375 and use Silpats on baking sheets
2 sticks butter (1 cup)
2 1/4 cups light brown sugar
2 1/4 cups rolled oats
3 tablespoons all purpose flour
1 egg lightly beaten
1 teaspoon salt
1 teaspoon vanilla
Melt the butter and sugar on the stove top.
Stir in the other ingredients and mix.
Use a small ice cream scoop and place about two inches apart.
Bake for about 7 minutes.
Allow to cool and then move to a cooling rack.
These would be really good with some dark chocolate either dipped on one side or drizzled over the top.
