Lemon Vinaigrette

3 tablespoons fresh lemon juice
1 teaspoon minced garlic
3/4 teaspoon salt
1/4 teaspoon black pepper
1/2 teaspoon dijon mustard
1/4 cup extra virgin olive oil

Combine all ingredients except the oil and then add the oil slowly while whisking to emulsify.
