Lemon Cheesecake Bites (no bake)

Ingredients

  • ½ cup coconut flour
  • ½ cup rolled oats use gluten free if needed
  • 8 oz. plain cream cheese
  • 2 Tbsp maple syrup
  • ½ tsp vanilla extract
  • ½ tsp almond extract
  • Zest of 1/2 of a lemon
  • Shredded coconut and extra lemon zest for rolling

Instructions

  • Add your coconut flour and oats to the bowl of a large food processor and process until a fine powder is formed (about 30-45 seconds).
  • Add the remaining ingredients (cream cheese, maple syrup, vanilla extract, almond extract, and lemon zest) to the food processor and process until smooth.
  • Using a small cookie scoop, scoop the batter onto a parchment lined pan or container. Sprinkle the bites with additional lemon zest and/or shredded coconut if desired.
  • Refrigerate the bites for 2nhours to allow them to harden. And enjoy!
  • You can store your No-Bake Lemon Cheesecake Bites in the fridge in a sealed container for up to 2 weeks. Or freeze for up to 3 months.

Dinner Rolls

Tara said to call these Moms Best Dinner Rolls...  Patrick said you should save this recipe, even though you probably won't!


1 cup milk (scalded and cooled to 100 - 110 degrees)

2 TB sugar

4 TB melted butter

1 Pkg dry yeast (2 1/4 tsp)

2 eggs (room temperature  and beaten)

3 1/2 - 4 cups all purpose flour

1 tsp salt


Add sugar and melted butter to cooled scalded milk and then add the yeast.  Stir and let rest for about five minutes to get foamy.  


Add the mixture to the mixer and add the beaten eggs.  

Add the salt and flour about half a cup at a time and knead dough in the mixer for about 5 - 7 minutes.  Don't add too much flour, the dough should still be a little sticky.


Remove dough from mixer and place in bowl with a little oil and turn to coat all of the dough, let raise for about an hour.  Shape the dough into rolls, take the dough and divide it into 12 parts and form into balls.

Place dough in a buttered baking pan and let raise for another hour.  


Bake in preheated 350 degree oven for 20 - 25 minutes.  They took 20 minutes in my oven at which time I removed them and brushed them with melted butter.  I turned the oven off and placed the rolls back inside for 1 minute.  When I removed them again I brushed them with butter again.  


This dough can be used for many recipes and you can increase the sugar up to 1/2 cup if you want a sweeter dough.  This would be great for cinnamon rolls, garlic butter rolls, etc.
