Dinner Rolls – The Hillbilly Kitchen
1 Cup milk, scalded and cooled to 100 – 110 degrees
2 tablespoons sugar up to ½ cup sugar
4 tablespoons melted butter
1 pkg dry yeast (2 ¼ tsp)
Combine all of the above and stir, let it set until it’s foamy (about 5 minutes).
Add 2 eggs (room temp) beaten to yeast mixture.
Mix 3 to 3 ½ cups bread flour (unbleached) or all purpose flour and 1 teaspoon salt to stand mixer and mix. Add yeast mixture and beat with dough hook for about five minutes. Remove from mixing bowl and put in a bowl coated with butter and turn to coat all surfaces. Cover and let rise in a warm place for about an hour until doubled.
Punch down dough and shape into balls (about 12). Let rise for another hour.

Noodles (hand pulled)
1/2 tsp baking soda
1 tsp kosher salt
1 Cup warm water
3 Cups all purpose flour
oil for brushing
- Dissolve the baking soda and 1 teaspoon kosher salt in the warm water. Place flour in stand mixer and add the water mixture. Use the dough hook to combine into a shaggy dough. Continue with the stand mixer on medium speed until the dough is shook and elastic, around 10 minutes. Wrap the dough in plastic and let it rest for 30 minutes longer. Divide into 3 equal parts. Use a rolling pin to roll them into rectangles about 12 inches long. Cut into one inch wide strips. Cover a sheet pan with plastic wrap and brush each with oil and then flip over and brush the other side. Cover with plastic wrap. Let rest for one hour. Take each strip and pull the noodles to make long thin strips.

Brown Gravy (no drippings)
2 cups water
2 tsp better than bouillon Beef
1 tsp better than bouillon Chicken
1 tsp onion powder
1/2 tsp garlic powder
1 1/2 tsp Worcestershire sauce
1/4 cup cold water
3 tbsp cornstarch
1 tbsp butter
Combine first 6 ingredients into a sauce pan and bring to a simmer. Combine cold water and cornstarch and add to saucepan. Cook until desired thickness. Add a tablespoon of butter once the desired thickness is reached. To darken, add a few drops of Kitchen Bouquet.

Cheeseburger Soup
- In a Dutch oven, melt butter and sweat onion until translucent, remove.
- Add ground beef, season with salt & pepper and cook until browned and a bit crispy, drain. Remove from pan.
- Add your chicken stock, & flour slurry, bring to boil scrapping bits off the bottom.
- Add half & half and Velveeta. Cook until all the cheese is melted, not boiling. Add in onion & hamburger.
- Season to taste and lower heat. Cover and cook for about an 1 hour. Add the tomatoes and lettuce, stir and serve. Top with chopped dill pickles.

Lemon Cheesecake Bites (no bake)
Ingredients
- ½ cup coconut flour
- ½ cup rolled oats use gluten free if needed
- 8 oz. plain cream cheese
- 2 Tbsp maple syrup
- ½ tsp vanilla extract
- ½ tsp almond extract
- Zest of 1/2 of a lemon
- Shredded coconut and extra lemon zest for rolling
Instructions
- Add your coconut flour and oats to the bowl of a large food processor and process until a fine powder is formed (about 30-45 seconds).
- Add the remaining ingredients (cream cheese, maple syrup, vanilla extract, almond extract, and lemon zest) to the food processor and process until smooth.
- Using a small cookie scoop, scoop the batter onto a parchment lined pan or container. Sprinkle the bites with additional lemon zest and/or shredded coconut if desired.
- Refrigerate the bites for 2nhours to allow them to harden. And enjoy!
- You can store your No-Bake Lemon Cheesecake Bites in the fridge in a sealed container for up to 2 weeks. Or freeze for up to 3 months.

Dinner Rolls
Tara said to call these Moms Best Dinner Rolls... Patrick said you should save this recipe, even though you probably won't!
1 cup milk (scalded and cooled to 100 - 110 degrees)
2 TB sugar
4 TB melted butter
1 Pkg dry yeast (2 1/4 tsp)
2 eggs (room temperature and beaten)
3 1/2 - 4 cups all purpose flour
1 tsp salt
Add sugar and melted butter to cooled scalded milk and then add the yeast. Stir and let rest for about five minutes to get foamy.
Add the mixture to the mixer and add the beaten eggs.
Add the salt and flour about half a cup at a time and knead dough in the mixer for about 5 - 7 minutes. Don't add too much flour, the dough should still be a little sticky.
Remove dough from mixer and place in bowl with a little oil and turn to coat all of the dough, let raise for about an hour. Shape the dough into rolls, take the dough and divide it into 12 parts and form into balls.
Place dough in a buttered baking pan and let raise for another hour.
Bake in preheated 350 degree oven for 20 - 25 minutes. They took 20 minutes in my oven at which time I removed them and brushed them with melted butter. I turned the oven off and placed the rolls back inside for 1 minute. When I removed them again I brushed them with butter again.
This dough can be used for many recipes and you can increase the sugar up to 1/2 cup if you want a sweeter dough. This would be great for cinnamon rolls, garlic butter rolls, etc.
